Haloumi and Couscous Salad

Our Haloumi and Couscous Salad is a delightful fusion of grilled Mezé Haloumi cheese, fluffy couscous, and a vibrant mix of fresh vegetables, all drizzled with a zesty vinaigrette, offering a taste of the Mediterranean in every bite.

    Ingredients

    Couscous

    • 1 tbsp Olive Oil
    • 1 cup Israeli Couscous
    • 1/2 tsp Salt
    • 300g Mezé Haloumi, cubed and
    • grilled
    • 1 Red Pepper, coarsely chopped
    • 1/2 cup Dill, chopped
    • Salt and freshly ground Black Pepper

    Dressing

    • 6 tbsp extra-virgin Olive Oil
    • 2 tbsp White Balsamic Vinegar
    • 1 tbsp smoked Paprika
    • 1/2 tsp Turmeric
    • 1 tsp Salt

    Directions

    Couscous

    Heat the oil in a large saucepan over medium-high heat. Add the couscous, stirring frequently, until golden, for 4 to 5 minutes.

    Add 2 cups water and the salt and bring to a boil. Reduce the heat to medium-low.

    Cover and simmer until the couscous is just tender and the liquid is absorbed, 9 to 10 minutes. Set aside to cool slightly.

    Haloumi

    Grill Haloumi. and then mix the dill, grilled Haloumi, and red pepper together in a large bowl.

    Add the couscous.

    For the dressing, whisk the oil, Balsamic Vinegar, paprika, salt and turmeric in a small bowl until smooth.

    Add the dressing and toss until all the ingredients are coated.
