Dakos Salad

Rustic, refreshing and full of Mediterranean character – this Dakos Salad celebrates simple ingredients at their best. Crisp barley rusks topped with juicy tomatoes, briny olives and crumbled Mezé Feta come together with a drizzle of our world-class olive oil and a touch of oregano. It’s light, vibrant and perfect as a starter or shared snack on warm days.

    Ingredients

    • Mezé Feta Cheese
    • 5 Medium Tomatoes, 4 chopped & 1 grated
    • 8 Mezé Calamata Olives, pitted and cut into slices
    • ½ Small Red Onion, very finely diced
    • 6 Cretan Barley Rusks or other crisp bread
    • Fresh Parsley, chopped
    • A sprinkle of Dried Oregano
    • Capers (optional)

    Dressing

    • 2 tbsp Mezé Olive Oil
    • 1 tbsp Red Wine Vinegar
    • Black Pepper & Salt to taste (go easy if using capers!)

    Directions

    If using rusks: begin by dipping the rusk in water. Do this quickly so that the rusks moisten but do not soak in the water.

    Place the tomatoes, onions, parsley and Mezé Calamata Olives in a bowl. Add the dressing and allow to sit for a few minutes.

    Place the rusks onto a serving plate. Spoon a generous amount of the salad onto each rusk, ensuring a liberal amount of dressing is added.

    Then crumble feta cheese over the top and add capers if you are using.
